D\u00e9couvrez ici deux de nos recettes pr\u00e9f\u00e9r\u00e9es !<\/p>\n<p><strong>Poitrine de porc glac\u00e9e avec noix de Saint-Jacques marin\u00e9es et caviar d&rsquo;omble chevalier<\/strong><br \/>\nL&rsquo;id\u00e9e que l&rsquo;on se fait de la poitrine de porc est plut\u00f4t consistante. Mais marin\u00e9 dans de la sauce soja et associ\u00e9 \u00e0 une d\u00e9licate coquille Saint-Jacques, on pense plut\u00f4t au plaisir d&rsquo;un pralin\u00e9 d\u00e9licat. Elle constitue un amuse-bouche festif accompagn\u00e9 d&rsquo;une coupe de champagne et marque le d\u00e9but des festivit\u00e9s de No\u00ebl.<\/p>\n<p><img decoding=\"async\" class=\"size-medium wp-image-9771\" src=\"https:\/\/dev.linslerhof.de\/wp-content\/uploads\/2020\/11\/schweinebauch-food-lecker-300x217.jpg\" alt=\"ventre de porc-food-l\u00e9g\u00e8re\" width=\"300\" height=\"217\" srcset=\"https:\/\/www.linslerhof.de\/wp-content\/uploads\/2020\/11\/schweinebauch-food-lecker-300x217.jpg 300w, https:\/\/www.linslerhof.de\/wp-content\/uploads\/2020\/11\/schweinebauch-food-lecker.jpg 600w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/p>\n<p><strong>Ingr\u00e9dients pour 4 personnes<\/strong><br \/>\n200 g de poitrine de porc avec couenne &#8211; 100 ml de sauce soja &#8211; 50 ml de cr\u00e8me fra\u00eeche &#8211; 50 ml de mirin (vin de riz sucr\u00e9) &#8211; 1 pinc\u00e9e de caviar d&rsquo;omble chevalier &#8211; 1 L de fond de volaille &#8211; 4 branches de romarin<\/p>\n<p><strong>Pr\u00e9paration<\/strong><br \/>\nPr\u00e9chauffer le four \u00e0 180\u00b0 C en mode chaleur tournante. Verser la sauce soja et le vin de riz dans une casserole moyenne avec couvercle. D\u00e9poser la poitrine de porc et la faire cuire au four, ferm\u00e9e, pendant 1,5 \u00e0 2 heures. Retirer la poitrine, couper la couenne et les tendons horizontalement, lester entre deux assiettes, laisser refroidir au moins 4 heures et presser. Refroidir \u00e9galement le fond et le tenir \u00e0 disposition.<\/p>\n<p>Couper les coquilles Saint-Jacques en 4 fines tranches et les faire mariner avec l&rsquo;huile d&rsquo;olive au citron vert et les \u00e9pices. Couper la poitrine de porc refroidie en cubes de la taille des portions et la glacer dans le fond sur le feu.<\/p>\n<p>Embrocher sur la branche de romarin aussi bien une tranche de moules qu&rsquo;un morceau de ventre et d\u00e9corer avec du caviar d&rsquo;omble chevalier.<\/p>\n<p>&nbsp;<\/p>\n<p><strong>La viande rose<\/strong><strong>Escalope de veau r\u00f4tie avec crevettes et courgette au muscat<\/strong><br \/>\nIl est d\u00e9sormais de notori\u00e9t\u00e9 publique que la viande perd une grande partie de ses talents gustatifs lorsqu&rsquo;elle est soumise \u00e0 une forte chaleur. Il existe une autre solution ! A chaleur douce, son civet de veau au four d\u00e9veloppe une tendret\u00e9 \u00e9tonnante &#8211; pour un morceau de viande que l&rsquo;on ne connaissait que par le bouillon.<\/p>\n<p><img decoding=\"async\" class=\"size-medium wp-image-9770\" src=\"https:\/\/dev.linslerhof.de\/wp-content\/uploads\/2020\/11\/tafelspitz-food-rezept-300x217.jpg\" alt=\"recette de tafelspitzfood\" width=\"300\" height=\"217\" srcset=\"https:\/\/www.linslerhof.de\/wp-content\/uploads\/2020\/11\/tafelspitz-food-rezept-300x217.jpg 300w, https:\/\/www.linslerhof.de\/wp-content\/uploads\/2020\/11\/tafelspitz-food-rezept.jpg 600w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/p>\n<p><strong>Ingr\u00e9dients pour 4 personnes<\/strong><br \/>\n1 pointe de veau de 800-1000 g &#8211; sel &#8211; poivre noir du moulin &#8211; 2 cuill\u00e8res \u00e0 soupe d&rsquo;huile d&rsquo;olive &#8211; 300 g de courge muscade sans peau ni p\u00e9pins &#8211; 1 poivron jaune, \u00e9pluch\u00e9 et coup\u00e9 en d\u00e9s &#8211; 1 poivron rouge, \u00e9pluch\u00e9 et coup\u00e9 en d\u00e9s &#8211; 2 \u00e9chalotes, coup\u00e9es en petits d\u00e9s 1 pointe de couteau &#8211; 1 cuill\u00e8re \u00e0 soupe d&rsquo;huile d&rsquo;olive &#8211; 1 cuill\u00e8re \u00e0 soupe de jus de citron &#8211; 1 cuill\u00e8re \u00e0 caf\u00e9 de jus de citron &#8211; 1 cuill\u00e8re \u00e0 caf\u00e9 de jus de citron paprika en poudre &#8211; 1 gicl\u00e9e de vinaigre de vin blanc &#8211; 20 g de graines de courge grill\u00e9es &#8211; huile d&rsquo;olive &#8211; 6 crevettes g\u00e9antes &#8211; coriandre du moulin &#8211; 1 branche de thym &#8211; 1 gousse d&rsquo;ail \u00e9cras\u00e9e &#8211; un peu d&rsquo;huile de graines de courge<\/p>\n<p><strong>Pr\u00e9paration<\/strong><br \/>\nPour le civet, faire chauffer l&rsquo;huile d&rsquo;olive dans une po\u00eale. Saler et poivrer, puis faire dorer sur toutes les faces, retirer et mettre au four pr\u00e9chauff\u00e9 \u00e0 environ 140\u00b0 C sur une grille de cuisine avec un bac de r\u00e9cup\u00e9ration pendant 35-40 minutes. cuire en rose. Retirer et laisser refroidir. Couper en tranches d&rsquo;environ 3 millim\u00e8tres \u00e0 l&rsquo;aide d&rsquo;une trancheuse, contre la fibre.<\/p>\n<p>Pour la courge muscade, faire chauffer l&rsquo;huile d&rsquo;olive dans une casserole et y faire revenir les \u00e9chalotes et les d\u00e9s de poivrons jusqu&rsquo;\u00e0 ce qu&rsquo;ils deviennent translucides. Ajoutez le potiron et laissez-le s&rsquo;impr\u00e9gner un peu sans le cuire compl\u00e8tement. Assaisonnez avec du sel, du poivre, du paprika en poudre et du vinaigre de vin blanc et ajoutez les graines de courge grill\u00e9es.<\/p>\n<p>Assaisonner les crevettes d\u00e9cortiqu\u00e9es et d\u00e9barrass\u00e9es de leurs boyaux avec du sel et de la coriandre. Les faire cuire dans l&rsquo;huile d&rsquo;olive en ajoutant les aromates jusqu&rsquo;\u00e0 ce qu&rsquo;ils deviennent translucides.
